HARNESSING THE UMAMI-RICH LEAVES OF SALTBUSH, ENLIVENED BY THEIR SEED, BRIGHTENED WITH RIVER MINT & THE FRUIT FROM DAVIDSON PLUM, CRAFTS A GIN WITH INFLUENCES FROM JAPAN, WHILST BEING DISTINCTLY AND UNAPOLOGETICALLY AUSTRALIAN.

50ml saltbush gin 
30ml fresh lime juice 
10ml sugar 
2 cubes of watermelon 
slice of ginger 
square of nori seaweed 
pinch of salt soda

muddle watermelon, ginger & nori in a shaker. add other ingredients & shake. double strain into highball glass. top with ice & soda. garnish with mint.
