At the heart of Matt Whiley's Sydney-based bar, RE, lies the core principle of eradicating food waste.

Opening in April 2021, the bar has secured the 46th position on the 2021 World’s 50 Best Bars list, and ignited a more intricate conversation concerning what it means to be sustainable in the modern word.

This limited edition collaboration between Økar and RE is a love letter to our war on waste. Created entirely from agricultural excess, as well as recycled spirits and wines from our distillery, the 2023 Wasteland Aperitif is the first fully recycled Aperitif in the world.
